Cheese Wafers Gorp
These little golden ringlets make a substantial trail meal when paired with a big, crisp apple and plenty of drinking water.
2 sticks butter
2 cups whole wheat flour
1/8 to 1/4 teaspoon cayenne pepper (optional)
8-ounce package of extra sharp Cheddar cheese, grated
1 cup crisp rice cereal
Set the oven for 350 degrees. Let butter soften at room temperature and mix in flour (and cayenne if using). Dough will be very thick. Fold in cheese and cereal. Drop by teaspoons on a baking sheet lined with parchment or nonstick foil. Flatten with a fork dipped lightly in flour. Bake about 15 minutes or until lightly browned. Cool completely and package for the trail. Makes about 48. Keep cool for up to one week.
